The passion

Inspired by my birthstone the rare, beautiful and highly sought after Tanzanite – this singular wine expresses my passion for creating unique sparkling wines in the time-honored traditional way. Dedicated to all who appreciate the finer things in life.

The Grapes

Origin of Grapes: Robertson & Stellenbosch. There is a specific quality and style that‘s created. This can only be obtained by buying in the grapes used for making Tanzanite. The grapes come from Robertson (gives flintiness), Rawsonville (adds a creamy, clean taste) and Stellenbosch (gives longevity and structure). Yields are kept in check through aggressive pruning and suckering..

Grapes are harvested in whole bunches by hand at 19- 20 Balling. Whole bunches are pressed through a soft pressing cycle. The must undergo its first fermentation with temperatures vigorously controlled to preserve the grape aromas. After fermentation each wine are tasted and blended. After the blending process the wines are stabilized, inoculated with yeast, and bottled. The bottled wine is taken into temperature controlled cellars. It is here in the still dark quiet of the cellar where the secondary fermentation takes place – the so called “prisse de mousse” literally the development of the mousse. The yeast converts the sugar to carbon dioxide and alcohol and the wine turn effervescent. Ageing on the lees is one of the crucial parts in making a good Cap Classique. The wine must reach its optimum maturity. After the process of riddling and degorgement the sugar is adjusted by adding “dosage”according to the wine’s taste. The wine is aged for a further few months to allow for the Liquor to marry with the wine to give it balance and elegance.

Tasting notes Tanzanite Brut Cap Classique

Composition: Chardonnay 80% Pinot noir 20%
Matured for 3 years on the lees. Fruity, flinty, nutty and creamy notes and beautiful brioche tones are coming through on the nose. It’s fresh, dry, lingering and well structured. Yeasty, toasty and fruity on the nose. Zesty mousse. This is a structured and elegantly matured wine. Drink now or over the next two years. Every bottle has its dégorgement date on the back label. This is my passion in life to create an excellent and unique South African Cap Classique. We have to make the best of every day in our life not just of every occasion. So, do enjoy the wine to celebrate the privilege of life. I make limited quantities as this is the only way I can personally handle it all by myself from picking of the grapes to riddling and degorgement of the wine. It’s a hand crafted wine made with lots of patience and care.
